The Easiest Vegan Granola Bars

I agree, they don’t look like much… but don’t not eat these because I’m a bad photographer, because what I lack in photography skills… I make up for in taste buds. And these my friends, my taste buds like.

I’m not kidding about the easy part – in the time it took for my boyfriend to grab me a bottle of wine from the store a 1/2 mile away, these were done. So just make them – how about make them now, I bet you have 3 minutes if you’re reading this!

For the sake of not being a liar – these have to go in the freezer for 1/2 hour to an hour after your done – but really, the prep work is minutes… sorry to deceive.

As I’ve said many times – budget and vegan don’t always go hand in hand, so I’m on the hunt for cheap, simple and delicious ways to make being a vegan easy. I had all of these things in my house, and for anyone just starting their vegan journey – I’d call all of these ingredients “cabinet staples”. Having these in my cabinet have saved me many grocery store trips – I use them often, and they’re not expensive! I bought most of it at Aldi, although surprisingly the Whole Foods bulk section (the one where the oats etc are lose and you put them in baggies) so far has been the cheapest for oats, grains, and seeds I’ve found! The most expensive part of this recipe was the dairy free chocolate chips – but that’s due to a limited store, I’m sure you can find a bag for less than the $5 I spent. So you might spend a bit if you’re picking up all of these ingredients at once – but trust me, they’ll be used.

These are a perfect mid day work snack – the high fiber in these will fill you up, the chocolate will cure that end of day sweet tooth, and you can feel good about eating one… or two!

The Easiest Vegan Granola Bars

Yummy, chocolately, easy, healthy-ish, granola bars!

Ingredients

  • 2 cups quick oats
  • 1/2 cup peanut butter or other nut butter
  • 1/2 cup of dairy free chocolate chips
  • 1/4 cup coconut oil
  • 1/4 cup blue agave
  • 1/4 cup chia seeds
  • 1/4 cup flax seeds
  • parchment paper

Directions

  1. Let me start by saying I eyeball measured everything except the oats – this recipe is NOT rocket science and does not have to be perfect. You just need the ingredients to stick together, so adjust as needed but those are rough measurements.
  2. Put everything in a mixing bowl and combine until it gets clumpy and is fully mixed.
  3. Line a square pan with parchment paper and dump your mixture in – press it all down firmly with the back of a spoon. You’ll want to spend the most time here, making sure it’s all really stuck together.
  4. Place in your freezer for 1/2 hour to an hour.
  5. Cut into bars and wrap individually!
  6. For the best consistency, keep in the fridge until about to eat to ensure it all sticks together!
